Peanut Chicken and Noodles with Baby Bok Choy

This is one of our family’s favorite dishes. Sometimes I serve it over white rice; other times over rice noodles. This time I chose spaghetti. What I like about the spaghetti is it holds up a little better than delicate rice noodles. It’s delicious; but honestly, the baby bok choy is the winner for me.

Dreamy Carrot Cupcakes

These little cupcakes are wonderful. You don’t need an occasion to make them; but Mother’s Day is not a bad idea! With or without the frosting they make a great breakfast, snack, or dessert.

In Season: Hatch Chiles

What the ‘Hatch’! These peppers are popular!
Well, it could be their short season – only 6 weeks during August and September. Or maybe its their wonderful and very unique flavor. Either way, they are definitely all the rage this time of year. And I thought it might be worthwhile to get to the bottom of these popular peppers.

Sausage Tortellini and Spinach Soup

One big bowl of comfort! And a generous bowl at that. If you want to add a loaf of sourdough or crusty French bread, it would be wonderful, but our family had plenty without.

Broiled Flank Steak and Brussels Sprouts with a Creamy Feta Sauce

It is not an exaggeration to say this meal is on the table in less than 30 minutes! So, pick the night you are the most strapped for time. My teenage daughter took over this meal and had it ready and waiting after a late sporting event.

Buffalo Chicken Tostadas

What a fun and tasty meal! If you’re a fan of buffalo wings, or buffalo anything, you’ll love this! And it’s versatile. Make it into a salad, wrap it in a soft tortilla, or stuff it in a pita pocket. You really can’t go wrong. But, I have say – the crunch of the tostada was a winner.

Slow Cooker BBQ Chicken and Slaw Sandwiches with Sweet Potato Fries

I’m scraping the bottle of the barrel for energy on Friday nights. And, getting dinner on the table sometimes seems almost impossible. On these nights, I am extremely thankful for my slow cooker. So, let that baby do the work for you. Toss the slaw and throw the sweet potatoes in the oven.
