Posole is a traditional Mexican soup or stew made with either chicken or pork, seasoned with spices, and slow cooked all day. Our version is a quick fix, but you could easily convert it to a slow cooker recipe by simply placing all the ingredients in the slow cooker and cooking on low for about 7-8 hours.
Sauces can transform a meal. And they literally take 2 minutes to make. This is a nice creamy mustard herb sauce. If you like the flavor of mustard use about 2 tablespoons. I went lightly so it would overpower the kids. I applied that same thought to the herbs. You can use more if you prefer. Do a little taste testing.
I may have found my new favorite taco! The blackened tilapia is just slightly spicy (so up the ground red pepper for more of a punch) and paired with sweet corn, jalapeno cream, a few onions, and creamy avocado – this is a winner!
Pull out the slow cooker! This is a fabulous sauce and is packed with flavor! If spaghetti with meat sauce is a favorite at your house like it is at mine, double the recipe. It keeps in the freezer for months. Our family prefers spaghetti, but I really like rigatoni.
On the table in 20! No marinating, mincing, or fussing with a lot of ingredients. Let the pesto do the work; and then throw everything on the grill and you’re in business. The simple yellow squash and sweet grilled tomatoes complement the juicy tender flavorful chicken perfectly. This is summer dining at its best.
Hot summer days call for a cold beer, a big bowl of chips, and fresh salsa. What makes this salsa great is the slow cooked melding of flavors, the ‘roasted’ effect of the tomatoes, and the fresh cilantro. Season it to your taste with hot sauce or additional fresh jalapeños.
