Argentinean Steak with Red Pepper Pico with Potato Cakes and Grilled Asparagus

My husband and I celebrated an anniversary in Buenos Aires a few years ago and ate our way through the huge city. Of all the incredible meals, the ones that stand out most in my memory are the spiced steaks and picos. This version is delicious; and pairs really well with the asparagus and potato cakes; which were fantastic! And a nice diversion from the standard baked, mashed, and scalloped rotation!

Argentinean Steak with Red Pepper Pico

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES PASSIVE TIME : MINUTES

INGREDIENTS

  • 2 cloves garlic, minced or pressed
  • 1 tablespoon dried thyme
  • 1 teaspoon pepper
  • 1 tablespoon chili powder
  • 2 teaspoon brown sugar
  • 1 teaspoon kosher salt
  • 1 1/2 pounds flank steak
  • Red Pepper Pico
  • 1 roma tomato, diced
  • 1 cup onion, diced
  • 1/2 red bell pepper, diced
  • 2 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper

DIRECTIONS

  1. Combine pico ingredients in a small bowl and place in the refrigerator to marinate.
  2. Place the pressed garlic on a chopping black and using the side of your knife, smash and press it into a paste.
  3. Chop/mix in thyme, pepper, chili powder, brown sugar, and salt until you have a paste.
  4. Use your hands and rub the paste onto the steak. Let steak sit at room temperature for about 30 minutes.
  5. Prepare grill or grill pan.
  6. Grill 4-5 minutes per side for medium rare, and 6-7 minutes per side for medium.
  7. Let steak rest at least 5 minutes, then slice against the grain.
  8. Serve with red pepper pico.

Potato Cakes

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound yukon gold potatoes
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1-2 cloves garlic, minced or pressed
  • 2 cups baby spinach, chopped
  • 2 ounces goat cheese
  • 1/4 cup sour cream
  • 1/4 cup heavy cream

DIRECTIONS

  1. Bake or microwave potatoes until tender. (I used the microwave) Let cool to the touch and remove skins.
  2. In a skillet, heat oil over medium high and sauté onions until translucent and soft. Add garlic and continue to sauté for about a minute.
  3. Add the spinach to the skillet and toss until wilted. Immediately remove the pan from heat.
  4. Coarsely mash the potatoes in a large bowl. Stir in spinach, goat cheese, sour cream, and cream. You may not need all the cream. The mixture should be thick.
  5. Form balls in the palm of your hand and press flat.
  6. Coat the bottom of your skillet with olive oil, heat over medium high until it shimmers.
  7. Brown the potato cakes for 3-4 minutes per side.

Grilled Asparagus

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Toss asparagus with oil and grill along side chicken the last few minutes.
  2. Grill until tender and slightly charred.
  3. Serve drizzled with vinaigrette.

NOTES

KID NOTE: The pico was not a favorite, but they really enjoyed the steak, potato cakes, and asparagus.

VEGETARIAN TIP: Skip the steak and grill assorted vegetables such as zucchini, eggplant, and mushrooms.

GLUTEN MODIFICATIONS: Gluten Free as written.

    I am so glad I made the effort to prepare this meal~so much flavor!!! I substituted chicken breasts and was pleased. We experimented with our air fryer for the potato cakes and they were delicious and light. I highly recommend this meal!
