Simple, quick, and perfect for a spring night. The char on the vegetables is my favorite and the kids loved the bacon wrapped steak. The rice recipes asks you to prepare twice as much rice as you need for tonight. Use the extra in tomorrow’s meal to speed things up a bit.

Herbed Rice

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 cups basmati rice
  • 3 cups water
  • 1 tablespoons butter
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon green onion, green and white parts minced
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Bring rice and water to a boil, reduce to simmer, cover, and let cook for 20 minutes.
  2. Add butter, parsley, and green onions to the remaining rice.
  3. Stir until butter has melted. Season with salt and pepper and serve.

Bacon Wrapped Steak and Veggie Kabobs

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 4-8 soaked wooden skewers, or metal skewers
  • 1 pound New York Strip, cubed
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Montreal steak seasoning, or other steak seasoning
  • 8 slices bacon
  • 1 cup mushrooms, trimmed
  • 1 red bell pepper, cut into 1” squares
  • 2 zucchini, cut into rounds
  • 1/2 cup red onion, sliced 1” thick
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Toss steak in olive oil, lemon juice, and steak seasoning. Set aside.
  2. Preheat grill to medium high (or you can use a grill pan indoors).
  3. Microwave bacon until almost cooked, but still bendable.
  4. Slice bacon in half to create 16 pieces.
  5. Wrap each cube of steak in a piece of bacon.
  6. Thread bacon wrapped steak and veggies, alternating.
  7. Season with salt and pepper.
  8. Grill kabobs for 2-3 minutes per side or until veggies are tender and steak is cooked to your liking.

NOTES

KID NOTE: The kids loved the steak and the zucchini, but pushed the onions and mushrooms to the side. They loved the rice.

VEGETARIAN TIP:  Replace the beef and bacon with additional vegetables.

GLUTEN FREE MODIFICATIONS:  Make sure your steak seasoning is gluten free.
