Think of a spiced up Alfredo sauce. Now, add chicken, peas, and big tubes of pasta to hold onto all that delicious sauce. If you want to cut down on the level of spiciness, choose a mild Cajun seasoning. And, consider using less than what's called for when cooking and then serve the Cajun seasoning on the side for those who want to ramp up the spice level. Enjoy!

Cajun Chicken Rigatoni



  • 12 ounces rigatoni
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced or pressed
  • 1 cup onion, finely diced
  • 1 tablespoon mild Cajun seasoning
  • 1 tablespoon paprika
  • 1/2 cup dry white wine
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1 cup frozen peas
  • 2 cups rotisserie chicken, skin removed and shredded


  1. Boil pasta according to package directions.
  2. Meanwhile heat olive oil in a skillet over medium high heat. Add onion and cook until translucent and tender.
  3. Add garlic and cook just a minute or two, being careful not to let it brown.
  4. Stir in Cajun seasoning and paprika and let cook another minute or two.
  5. Add wine and let simmer down to about half it's volume.
  6. Stir in chicken stock, cream, and cheese. Simmer for about 5 minutes to allow to thicken somewhat.
  7. Fold in the peas and shredded chicken and heat through.
  8. Add drained rigatoni to the skillet and toss to combine.
  9. Plate and garnish with additional parmesan if desired.

Simple Italian Side Salad



  • 1 head romaine lettuce
  • Vinaigrette (double)
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon garlic salt
  • 1 teaspoon Italian seasonings
  • 1/4 teaspoon pepper


  1. Wash, dry, and tear into a bowl.
  2. Blend vinaigrette ingredients with whisk and drizzle over lettuce.
  3. Toss and serve.

KID NOTE: I used a very small amount of Cajun seasoning in the sauce to give it flavor but not to much of a kick.

VEGETARIAN TIP: Skip the chicken and add mushrooms to the onion and garlic.

GLUTEN MODIFICATIONS: Use brown rice pasta.
