Dan Dan Noodles is a popular Chinese Sichuan dish of fresh noodles, minced pork, in a broth of chili oil, Sichuan peppers, and tahini paste. Whether dining out or searching for a recipe, you'll find there are many variations with slightly different ingredients and styles. And most often the ingredients are very difficult to come by as a home cook. I've done my best to create a recipe that is as true to authentic as you can be using grocery store ingredients. And, I have to say, while not an exact replica - it's pretty darn delicious!

Dan Dan Noodles

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 8 ounces Ramen Noodles, or ramen noodles
  • 2 tablespoons olive oil
  • 1 pound ground pork
  • kosher salt and pepper
  • 2 tablespoons ginger, grated or finely minced
  • 1 1/2 cups chicken stock
  • 3-4 tablespoons chile garlic sauce
  • 3 tablespoons rice wine vinegar
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons peanut butter
  • 1 1/2 teaspoons sesame oil
  • 1/4 cup roasted peanuts, chopped
  • 2 tablespoons green onion, sliced

DIRECTIONS

  1. Cook noodles according to package directions, drain and reserve.
  2. Heat olive oil in a large skillet over medium high heat until it begins to shimmer.
  3. Add pork, season with salt and pepper, and cook until nicely browned and finely crumbled.
  4. Stir in ginger and cook a minute or two.
  5. Stir in chicken stock, chili garlic sauce, vinegar, soy sauce, peanut butter, and sesame oil.
  6. Let simmer for about 10 minutes. Taste and adjust seasonings with salt and pepper, and maybe a bit more chili garlic sauce.
  7. Add the cooked noodles, toss to combine, and serve garnished with sliced green onions and peanuts.

Edamame (Shell on Soybeans)

SERVINGS : 4 PEOPLE COOK TIME : MINUTES

INGREDIENTS

  • 12 oz edamame (frozen or refrigerated), shell on
  • kosher salt, to taste

DIRECTIONS

  1. Place soybeans and 1/4 cup water in a covered microwave safe dish.
  2. Heat on high for 4-5 minutes or until beans are steaming.
  3. Remove from microwave, drain water, and season with salt.

NOTES

KID NOTE: I used very little chili garlic sauce to make it mild for the kids. They loved it and always enjoy ‘pop peas’.

VEGETARIAN TIP: Substituted minced mushrooms for the pork.

GLUTEN MODIFICATIONS: Use tamari instead of soy sauce and rice noodles instead of egg noodles.

    I only used 3tsp of chili garlic sauce and it was super spicy. I didn’t bother offering to my kiddo as it made my eyebrows sweat! Tasty, but since I can’t feed it to my kid, probably won’t make often.
