Farmhouse Pork with Mushroom Gravy over Rice with Broccoli

Comfort food as its finest! What this really reminds me of is a remake of casserole my mom used to make when I was a kid. The same warm feeling, just without the can of mushroom soup. Tender pork, incredible mushrooms, and savory gravy all sitting atop a bed of rice!

Farmhouse Pork with Mushroom Gravy

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 pound pork chops, 1 1/2” thick
  • kosher salt and pepper
  • 10-12 cloves garlic, pealed
  • 8 oz mushrooms, trimmed and quartered
  • 2 tablespoons all-purpose flour
  • 3/4 cup dry white wine, or dry vermouth
  • 1 cup chicken stock
  • 1/2 teaspoon dried thyme
  • 2 tablespoons butter

DIRECTIONS

  1. Preheat oven to 400.
  2. Season pork with salt and pepper.
  3. Heat oil in an oven proof skillet (like cast iron) over medium high heat.
  4. Once it shimmers, add pork and garlic and cook for 3-4 minutes, stirring garlic but not touching the pork.
  5. Flip the pork, add the mushrooms, and transfer to the oven.
  6. Cook for about 15 minutes or until the internal temperature of the pork is 150-160.
  7. Transfer the pork to a plate.
  8. Return the pan to the stove top and heat at medium high.
  9. Sprinkle flour over the garlic cloves and mushrooms and stir to combine. Add wine and simmer for a couple of minutes letting the wine reduce to about half it’s volume.
  10. Add the broth, thyme, and butter, and heat through.
  11. Return pork to the pan and heat.
  12. Serve over rice with extra gravy.

Jasmine Rice

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 cups jasmine rice
  • 3 cups water
  • 2 tablespoons butter, optional
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Put rice and water in a pot and bring to a boil.
  2. Lower the heat to simmer, cover, and cook 20 minutes (40 minutes for brown jasmine).
  3. Remove lid, fluff with a fork, and serve

Broccoli

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound broccoli, cut into florets
  • kosher salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Steam or microwave broccoli until bright green and tender.
  2. Season with salt and pepper.

NOTES

KID NOTE: The kids ate this up (well not the mushrooms).

VEGETARIAN TIP:  Use thick sliced acorn squash instead of pork. Adjust the cook time accordingly.

GLUTEN MODIFICATIONS: Use rice flour.
