Grilled Pork Chops with a Warm Potato and Green Bean Salad

I can't even tell you how many years I've been making some variation of this warm potato and green bean salad. Besides being delicious, it's the side dish to anything grilled! The dressing does double duty as the marinade for the pork chops, although it would also be great with shrimp or chicken too.

Grilled Pork Chops with a Warm New Potato and Green Bean Salad

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 1/2 pound pork chops
  • 1 pound baby new potatoes, cut into bite sized pieces
  • 1/3 cup feta cheese crumbles (or goat cheese crumbles)
  • 3/4 pound green beans
  • 1/4 cup walnuts, or other nut
  • Dressing/Marinade
  • 1/4 cup Dijon mustard
  • 2 tablespoons white wine vinegar
  • 2/3 cup olive oil
  • 1/4 cup shallot, chopped
  • 2 teaspoon dried rosemary, or 2T fresh
  • 1/4 teaspoon rubbed sage
  • 1/8 teaspoon kosher salt

DIRECTIONS

  1. Preheat oven to 450.
  2. Combine dressing with a whisk or shaken in a bottle.
  3. Place half the mixture in a resealable bag or shallow dish and marinate the pork chops.
  4. Place potatoes on a rimmed baking dish and drizzle with about 1/4 cup of the dressing. Toss to coat.

  7. Grill the pork chops 4-5 minutes per side or internal temperature is about 160 degrees.
  8. Meanwhile, microwave the green beans in covered dish with a little water for a minute or two. You want them just barely cooked and nice and crisp.
  9. Transfer the cooked potatoes to a serving bowl. Toss with remaining dressing, green beans, feta cheese, and walnuts.

VEGETARIAN TIP: Grill portabella mushroom caps instead of pork chops.

    Delicious! I used turkey chops instead and there was just the right amount of marinade to dress everything well! I like the tanginess of the feta in the salad, too.
