KID NOTE: The loved the burgers, tried the tzatziki, and did OK with the tabouli.
VEGETARIAN TIP: Substitute 2 cans chick peas for the ground meat. Drain peas and mash. Add 1 cup bread crumbs and 2 eggs. Mix with other ingredients as directed and form patties.
GLUTEN MODIFICATIONS: Use GF hamburger buns.
We loved this. Only wish I had double the tzatziki sauce. Next time I’ll cook the quinoa further in advance. Mine needed a little longer than 15 minutes and it was wet, warm and sloshy but we still loved it!
Hubby and kids were not fans of this meal. I was disappointed because it took so long to chop up everything. I would definitely recommend prepping ahead by chopping ahead of time. To me, this was a good meal to try but likely won’t make again.
