The flavors of a traditional gyro meet the convenience of a weeknight recipe! And it's glorious! Moist bold meat, tangy cold tzatziki sauce, crisp cucumbers, and sweet tomatoes, on a light bun. Our family adores this burger. So much so, I often double the meat recipe and make little meatballs for snacks.

Tabouli Salad

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1/2 cup quinoa
  • 1 1/2 cups water
  • 1/2 teaspoon kosher salt
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic, minced or pressed
  • 1/4 cup fresh mint leaves, minced,
  • 1/2 teaspoon pepper
  • 1/2 cup fresh parsley, chopped
  • 1 cup roma tomato, chopped
  • 1 cup cucumber, chopped

DIRECTIONS

  1. Bring quinoa and water to a boil, reduce to a simmer, cover, and let cook 15 minutes. Remove from heat and reserve for later.
  2. Combine olive oil, lemon juice, garlic, mint, and pepper with a blender or blender stick until combined.
  3. Toss prepared quinoa with dressing and remaining ingredients.

Gyro Burgers

INGREDIENTS

  • 1/2 cup red onion, minced
  • 1 1/2 lbs ground turkey, or pork
  • 1/2 tablespoon garlic, minced
  • 1/2 tablespoon dried marjoram
  • 1/2 tablespoon rosemary
  • 1 teaspoons kosher salt
  • 1/4 teaspoon black pepper
  • 1 roma tomato, sliced
  • 1/2 cucumber, sliced thinly
  • 1 cup baby mixed greens
  • 4 pita buns, or bread

DIRECTIONS

  1. Place meat, onions, garlic, marjoram, rosemary, salt, and pepper in a large bowl and combine with your hands.
  2. Form into patties and grill until done to your liking or no longer pink in the middle.
  3. Serve on pita buns with tzatziki sauce (recipe follows), sliced tomatoes, cucumbers and greens.

Tzatziki Sauce

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 5.3 oz Greek yogurt
  • 2 tablespoons cucumber, peeled and finely chopped
  • pinch kosher salt
  • 1 clove garlic, pressed or minced
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon red wine vinegar

DIRECTIONS

  1. Combine all and refrigerate.

NOTES

KID NOTE: The loved the burgers, tried the tzatziki, and did OK with the tabouli.

VEGETARIAN TIP: Substitute 2 cans chick peas for the ground meat. Drain peas and mash. Add 1 cup bread crumbs and 2 eggs. Mix with other ingredients as directed and form patties.

GLUTEN MODIFICATIONS: Use GF hamburger buns.

    We loved this. Only wish I had double the tzatziki sauce. Next time I’ll cook the quinoa further in advance. Mine needed a little longer than 15 minutes and it was wet, warm and sloshy but we still loved it!

    Hubby and kids were not fans of this meal. I was disappointed because it took so long to chop up everything. I would definitely recommend prepping ahead by chopping ahead of time. To me, this was a good meal to try but likely won’t make again.
