Pear and Blue Cheese Bundles

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 2 pear, cored and cut into 6 wedges
  • 1 lemon
  • 1 cup arugula
  • 1/3 cup crumbled blue cheese, chunked, about 3oz
  • 6 oz prosciutto, cut lengthwise

DIRECTIONS

  1. Toss the pears in lemon juice to prevent browning
  2. Lay a slice of prosciutto on the counter.
  3. Place a slice of pear in the center of the prosciutto.
  4. Gently mound a small amount of blue cheese on top of the pear.
  5. Lay a couple of leaves of arugula next to the pear.
  6. Carefully bring one side of prosciutto up and over the top of the pear twisting it once at the top. Tuck the edge under the pear.
  7. Repeat with the other side of the prosciutto, twisting it once at the top of the pear and tucking it under.
  8. The ‘twist’ is visual. You can also just wrap them around.

NOTES

GLUTEN MODIFICATIONS: Gluten free as written.
