KID NOTE: The kids ate this meal up! The only thing left on their plates were a couple lonesome tomatoes.
VEGETARIAN TIP: Instead of chicken, use very thin slices of eggplant. Make sure to salt the eggplant and let sit for 20 minutes before breading to remove excess moisture. Increase the oven temp to 450 and bake for 8-10 minutes per side.

This was a clear hit with the kids! I should have baked the potatoes a little longer or put the broiler on for a few minutes for a toasty top. They are already begging for the chicken again!
