This is a meal worthy of company. And, it’s simple to prepare, although it takes a little preparation. If you’ll get the oven preheated and the potatoes started first, you’ll speed up the process a lot. When the potatoes are ready to go in the oven, put them a lower rack leaving the upper available for the chicken. Then, coat your chicken and get it ready for the oven. When the potatoes have about 15-20 minutes remaining, throw in the chicken, and prepare the green beans. The chicken and potatoes take a bit of time to cook, but it's worth it!

Pecan Crusted Chicken

INGREDIENTS

  • 1 pound boneless skinless chicken breasts, pounded to 1/2”
  • 2 large egg
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon garlic salt
  • 3/4 cup pecans, chopped
  • 1/2 cup Parmesan cheese (grated)

DIRECTIONS

  1. Preheat oven to 375.
  2. In a shallow dish, beat eggs with lemon pepper and garlic salt. Set aside.
  3. In a food processor, pulse pecans until fine. (Or mince with a knife.)
  4. Transfer pecans to another shallow dish. Add parmesan and combine.
  5. Lightly grease a foil lined baking sheet.
  6. Dip pounded chicken into egg wash and then coat in pecan mixture. Use your hands to press mixture onto each side of the chicken if necessary.
  7. Transfer coated chicken to prepared baking sheet and bake 8-10 minutes, flip, and bake another 8-10 minutes.
  8. Be sure to keep an eye on your chicken. Baking times vary greatly depending on thickness. So, when there is about 3 minutes remaining, poke a piece with a fork and see if the juices run clear. If they do, remove from the oven.

Gouda Au Gratin Potatoes

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 3-4 potato
  • 1 1/2 cups whole milk
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 4 ounces Smoked Gouda, grated

DIRECTIONS

  1. Preheat oven to 375.
  2. Peel and slice potatoes 1/8” thick. A mandoline makes this very quick and easy.
  3. In a large high sided pan, heat potatoes, milk, garlic salt, and pepper to a low boil.
  4. Reduce to simmer and let cook for about 10 minutes.
  5. Transfer 1/2 the potatoes to a lightly greased baking dish. Top with 1/2 the cheese.
  6. Add remaining potatoes and top with remaining cheese.
  7. Bake uncovered for 30 minutes.

Green Beans with Shallots and Tomatoes

INGREDIENTS

  • 1 pound green beans
  • 1 shallot, thinly sliced
  • 1 cup grape tomato, halved
  • 2 tablespoons olive oil
  • kosher salt and pepper, to taste

DIRECTIONS

  1. Boil green beans for about 3-4 minutes or until crisp tender. Immediately remove, drain, and rinse in cold water.
  2. In the same pan, sauté the shallots in oil until they become translucent. Add the tomatoes and cook for a minute or two.
  3. Return green beans to the pan, toss to combine, and season with salt and pepper.

NOTES

KID NOTE:  The kids ate this meal up! The only thing left on their plates were a couple lonesome tomatoes.

VEGETARIAN TIP:  Instead of chicken, use very thin slices of eggplant. Make sure to salt the eggplant and let sit for 20 minutes before breading to remove excess moisture. Increase the oven temp to 450 and bake for 8-10 minutes per side.

    This was a clear hit with the kids! I should have baked the potatoes a little longer or put the broiler on for a few minutes for a toasty top. They are already begging for the chicken again!
