KID NOTE: The kids were not fans of the tabbouleh salad or the tahini sauce. I served them sliced fruit and veggies from the fridge as their sides.

I think mint would be great in the medallions and the salad!
What would you recommend as a substitute for tahini?
I think I would try sunflower butter (Sunbutter) thinned with a little water. I’ve never tried this, but I think it would work great. Or, you could use tzatziki sauce instead.

This was fantastic! My husband claims it is one of the best meals he’s ever had. He wants it at least once a week going forward! ^_~
This was delicious and so easy on a weeknight! I really liked the sauce, but found that I had to add about a 1/4 cup of water to make it a nice creamy consistency.
