Gyro Medallions with Tahini Sauce and a Quinoa Tabbouleh Salad

These little medallions remind me of little gyro burgers. Serve them along side this crisp quinoa tabbouleh salad or maybe cut them in half and wrap them in warm pitas. The tahini sauce is fantastic drizzled on top and whole meal is just packed with flavor!

Gyro Medallions

SERVINGS : 4 PEOPLE COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 pound ground pork
  • 1/2 cup onion, chopped
  • 3 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced or pressed
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

DIRECTIONS

  1. Combine all ingredients and carefully form 4” medallion patties.
  2. Heat a cast iron pan or other heavy pan over medium high heat.
  3. Cook medallions 3-4 minutes per side or until they are cooked through and no longer pink in the center.
  4. Serve with tahini sauce.

Tahini Sauce

INGREDIENTS

  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced or pressed
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon cayenne pepper, optional

DIRECTIONS

  1. Combine with food processor, blender stick, or whisk.
  2. Refrigerate until serving.

Quinoa Tabbouleh Salad

SERVINGS : 6 SERVINGS COOK TIME : MINUTES PREP TIME : MINUTES

INGREDIENTS

  • 1 cup quinoa
  • 1/2 teaspoon kosher salt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced or pressed
  • 1/3 cup olive oil
  • 1 cup cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 2/3 cup flat-leaf parsley, chopped
  • 2 tablespoons red onion, minced

DIRECTIONS

  1. Cook quinoa according to package directions.
  2. Set aside to cool.
  3. In a large bowl, combine remaining ingredients.
  4. Once the quinoa has cooled, add it to the bowl with the other ingredients. Stir and adjust salt and pepper to taste.

NOTES

KID NOTE: The kids were not fans of the tabbouleh salad or the tahini sauce. I served them sliced fruit and veggies from the fridge as their sides.

VEGETARIAN TIP: Replace the pork with a mashed chickpeas, 1 egg, and enough breadcrumbs to hold it all together.

GLUTEN FREE MODIFICATIONS: Gluten free was written.

    What would you recommend as a substitute for tahini?

    I think I would try sunflower butter (Sunbutter) thinned with a little water. I’ve never tried this, but I think it would work great. Or, you could use tzatziki sauce instead.

    Tzatziki sauce was great with the medallions. Thanks for the recipe link. I made my medallions with ground beef but followed your recipe otherwise and everything was delicious.

    This was delicious and so easy on a weeknight! I really liked the sauce, but found that I had to add about a 1/4 cup of water to make it a nice creamy consistency.
