Slow Cooker Broccoli Beef

Slow Cooker Broccoli Beef 4.13/5 (8 votes)

All I can say is "Holy Cow Flavor"! I've served my fair share of Broccoli Beef dishes and they are all yummy, but this one is super! The sauce packs a punch of flavor and the meat is really tender. One note though; this slow cooker recipe doesn't cook as long as a typical one would. If you have a fancy slow cooker with a timer, you're all set. But for those of us with the old-fashioned turn dials, we have a couple of choices. One, you can cook on high for 2 hours if you get home in time to make that happen. Or, what I did was throw it all together (it takes 5 minutes) while I was cooking dinner the night before. Then I turned it off before I went to bed, and stuck it in the fridge. You can heat it back up in the slow cooker or if you're in a rush, microwave it when you're microwaving the broccoli. Either way, it's delicious!

Slow Cooker Broccoli Beef

  • 1 1/2 pounds flank steak, thinly sliced
  • 1 cup beef stock
  • 2/3 cup low sodium soy sauce
  • 1/3 cup brown sugar
  • 1 tablespoon sesame oil
  • 2-3 cloves garlic, minced or pressed
  • 1/4 teaspoon red pepper flakes
  • 4 cups broccoli, cut into florets
  • 2 tablespoons cornstarch
  • 4 tablespoons water

  1. Combine flank steak, beef broth, soy sauce, brown sugar, sesame oil, garlic, and red pepper flakes in the bowl of a slow cooker.
  2. Stir to combine, cover, and cook on low for 4-5 hours (or 2 hours on high).
  3. 30 minutes before serving, combine cornstarch and water in a small dish until dissolved, then stir into beef mixture. Cook for another 20 – 30 minutes.
  4. Meanwhile, place broccoli and about 1/4 cup water in a lidded microwave safe dish and microwave for about 3 minutes or until bright green and crisp tender.
  5. Toss broccoli with beef mixture and serve over rice or rice noodles.

KID NOTE: The kids loved every bite.

VEGETARIAN TIP: Use mushrooms and zucchini instead of beef. You will not need to use a slow cooker. Simply saute the vegetables and then add the sauce. Simmer until reduced somewhat, then add the corn starch and water mixture to thicken.

GLUTEN MODIFICATIONS: Use tamari instead of soy sauce.

Great recipe! I cooked the meat on high the day before & warmed it in the slow cooker and added remaining ingredients the next day. Worked out great.
