Slow Cooker Pulled Pork “Rueben” Sandwiches with Fresh Fruit

Slow Cooker Pulled Pork “Rueben” Sandwiches with Fresh Fruit 4.75/5 (8 votes)

If you're a fan of Food Network TV like me, you've probably watched Diners Drive-Ins and Dives. What I love about the show is the recipe tease - never really giving you the exact recipe and leaving you to guess. Well, these pulled pork "Ruebens" were my attempt at figuring out their mysterious recipe. And, man they were a success! Crisp buttery bread, flavorful pulled pork, tangy kraut, and over the top Russian dressing. The best part is there's dressing left over for another night. Win!

Slow Cooker Pulled Pork "Reuben" Sandwiches

  • 1 1/2 pound pork loin
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon ground mustard
  • 1 teaspoon kosher salt
  • 8 slices bread
  • 4 tablespoons butter, at room temperature
  • 4 slices Swiss cheese
  • 1 cup sauerkraut
  • Russian Dressing (Makes a Double Batch)
  • 3/4 cup mayonnaise
  • 1/4 cup chili sauce
  • 2 tablespoons sour cream
  • 2 teaspoons fresh parsley, minced
  • 1 tablespoon onion, minced
  • 2 tablespoons dill pickle relish
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon prepared horseradish
  • 1/2 teaspoon Worcestershire sauce

  1. Place the pork loin in the bowl of your slow cooker.
  2. Combine paprika, garlic powder, brown sugar, mustard, and salt in a small bowl.
  3. Sprinkle the mixture evenly over the pork.
  4. Carefully pour water around the pork. The level should reach about half of the pork.
  5. Cover the slow cooker and cook on low for 7-8 hours.
  6. Use forks to pull the pork apart and then place it back in the juices.
  7. Combine dressing ingredients and set aside.
  8. Butter one side of each slice of bread.
  9. Build the sandwiches with the buttered sides facing outward.
  10. Layer pulled pork, Swiss cheese, sauerkraut, and Russian dressing.
  11. Grill in a large skillet over medium high heat until bread is golden and cheese has melted.

Excellent! The kids skipped the sauerkraut but loved the dressing – even the picky one!

This was amazing. I didn’t have horseradish, so I subbed half a clove of fresh garlic. We had left over slow cooker pork. So delicious. Can’t say enough good things!
