Pan Seared Pork Chops with Green Beans and Mushrooms and Mashed New Potatoes

This gorgeous meal is a breeze to pull together and super fast! And there’s very little to clean up since the chops and the veggies use the same pan and the easy potatoes cook in the microwave. That’s my kinda meal! And the icing on the cake is that it’s mighty tasty too!

Mashed New Potatoes

SERVINGS : 4 PEOPLE PREP TIME : MINUTES

INGREDIENTS

  • 1 pound new potatoes
  • 1/2 cup water
  • 1/4 cup milk
  • 2 tablespoons butter
  • kosher saltto taste
  • pepperto taste

DIRECTIONS

  1. Quarter potatoes and place in a microwave safe dish.
  2. Add water and cover.
  3. Cook on high for 5 minutes. Remove from microwave and stir. Cook for another 5 minutes.
  4. Let sit covered for a few minutes, then drain the water.
  5. Use a potato masher and mash in milk and butter.
  6. Season with salt and pepper.

Pan Seared Pork Chops with Green Beans and Mushrooms

SERVINGS : 4 PEOPLE PREP TIME :  MINUTES

INGREDIENTS

  • 1 pound boneless pork loin chops
  • 2 tablespoons honey
  • 2 tablespoons red wine vinegar
  • 2 cloves garlicminced or pressed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 pound green beanstrimmed
  • 8 ounces mushroomsstemmed and quartered
  • 1 tablespoon olive oil
  • kosher salt and pepperto taste

DIRECTIONS

  1. Combine honey, vinegar, garlic, salt and pepper in a resealable bag or shallow dish. Add pork chops and let marinate for about 30 minutes (if you have the time).
  2. Heat olive oil in a heavy skillet over medium high heat. When the oil begins to shimmer, add chops. (Discard marinade.)
  3. Sear for 2-3 minutes, flip, and cook another 2-3 minutes depending on the thickness of the chops. Don’t overcook or they will be tough. The internal temperature should be at least 150.
  4. Transfer chops to a plate and tent lightly to keep warm.
  5. Add a bit more oil to the pan if necessary, then add green beans and mushrooms.
  6. Saute for 3-4 minutes or until beans are crisp tender and mushrooms are soft and lightly browned.
  7. Season with salt and pepper to taste.

NOTES

KID NOTE: I rescued all the lonely mushrooms off the kid plates.

VEGETARIAN TIP: Replace the pork with sliced eggplant.
