Roasted Salmon and Broccoli with Parmesan New Potatoes

This meal takes a bit of time in the oven. So, make sure to start the potato recipe first. In the last 10 minutes of roasting, add the salmon. Everything comes out together and dinner is served. And it’s delicious!

 

Parmesan Roasted New Potatoes

SERVINGS : 4 PEOPLE COOK TIME :  MINUTES PREP TIME :  MINUTES

INGREDIENTS

  • 1 tablespoon olive oil
  • 3-4 slices baconchopped
  • 1 pound new potatoesroughly peeled and quartered
  • 2 tablespoons parmesanshredded
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper

DIRECTIONS

  1. Preheat oven to 425.
  2. Place potatoes in a pot and fill with water until potatoes are covered.
  3. Bring to a boil and cook for about 10 minutes or until potatoes are fork tender.
  4. Line a rimmed baking sheet with foil and lightly grease.
  5. Drain the potatoes and arrange them in a single layer on the baking sheet.
  6. Sprinkle with chopped (raw) bacon.
  7. Transfer to the oven and roast for about 10 minutes.
  8. Remove from oven, flip and arrange in a single layer, and return to the oven for another 10 minutes.
  9. Again remove the potatoes from oven, sprinkle with garlic powder, salt, pepper and cheese. Roast for 10 minutes more or until potatoes are browned and cheese is melted.

Roasted Salmon and Broccoli

INGREDIENTS

  • 1 pound salmon fillets
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 lemonjuiced and 1t zested
  • 1 tablespoon olive oil
  • 1 pound broccolicut into bite sized florets

DIRECTIONS

  1. Preheat the oven to 425.
  2. In a small bowl, combine the garlic salt, pepper, paprika, lemon zest, lemon juice, and olive oil.
  3. Line a rimmed baking sheet with foil and lightly grease.
  4. Place salmon, skin side down, in the center of the sheet and drizzle with marinade. Let marinate on the counter for about 20 minutes (if you have the time).
  5. Arrange the broccoli around salmon and transfer to the oven.
  6. Roast for about 10-12 minutes or until fish is flaking and opaque in the center.

NOTES

KID NOTE: The kids ate this meal very well.

VEGETARIAN TIP: Instead of salmon, marinade and pan sear firm tofu with the broccoli.
